1 Ingredients

  • 1 Mediterranean Sardine
  • 1/4 cup Jalapeno diced
  • 1/4 cup Zucchini diced
  • 1/4 cup Cucumber diced
  • 1/4 cup Red Bell Pepper diced
  • 1/4 cup Basil
  • 1/4 cup Tomato
  • 1/4 cup Mango diced
  • 1/4 cup Fava Beans
  • 1 Lemon
  • 1 tbsp Olive Oil
  • Salt

 



2 Preparation

For the Sardine:

  • Clean & Gut Sardine. 
  • Clear out pin bones.
  • Scrape off loose scales.
  • Lightly Rinse.
  • Heat a pan at medium heat.
  • Sear skin side down while gently pressing to crisp skin.
  • Increase to medium high heat.
  • When edges turns white, flip sardine and cook for 10 seconds.
  • Remove sardine from pan and drain on excess oil.

For Vegetables:

  • Add all vegetables to a mixing bowl. 
  • Gently tear the basil into the bowl.
  • Squeeze the juice out of one lemon.
  • Add olive oil.
  • Sprinkle with Salt to taste.
  • Toss.

Plate the sardine and top with vegetables.
