Rooted in Seasonality
Named after Seia, the Roman goddess associated with the sowing of seeds, the concept draws inspiration from agriculture, seasonality, and the quiet rhythms of nature. That philosophy carries into the culinary program, led by Executive Chef for The Bastion Collection Salvatore Martone in collaboration with Executive Chef Alessandro Morrone. Together, the pair present a contemporary Italian menu rooted in tradition and shaped by seasonal ingredients, balancing refinement with restraint.
The beverage program follows a similarly thoughtful approach. Directed by mixologist Michele Montauti, whose experience includes serving as beverage director across Aman properties in Asia, the cocktails draw inspiration from global influences and hospitality traditions while complementing the restaurant’s ingredient-driven philosophy.

Above the restaurant, Seia Club extends the experience into a more intimate setting designed around community and conversation. Operating as a private members club on the 55th floor, the space shifts throughout the day, serving as a daytime meeting place before evolving into a curated social environment by evening. The transition reflects the changing energy of Brickell itself, where business, culture, and nightlife increasingly overlap.
