Founded by Chef Izu Ani and hospitality entrepreneur Evgeny Kuzin under Fundamental Hospitality, the concept arrives with a clear point of view—one rooted in Greek-Mediterranean tradition, guided by seasonality, and shaped by a sense of shared experience at the table.
A Restaurant Defined by Elevated Simplicity
At GAIA, the philosophy is straightforward yet intentional: to elevate the environment in which simple food is served. The menu reflects that balance, offering dishes that are both familiar and expressive, designed to be shared and revisited.
Raw selections such as Bluefin Tuna Caviar and Sea Bream Carpaccio introduce the experience with clarity and restraint, while starters like barrel-aged feta wrapped in honey, nuts, and filo pastry, and classic moussaka, ground the menu in tradition. From the wood oven, prawns arrive with harissa, rosemary, and chili, layered with depth without excess.
From the sea, whole fish are prepared to order using traditional techniques, whether salt-baked with citrus and herbs or finished with harissa. The approach extends to mains, where slow-cooked baby goat, charcoal-grilled rib eye, and lobster linguini round out a menu that moves comfortably between land and sea.

Cocktails such as the Santorini Spritz blend vodka with lychee, hibiscus, rose, and citrus, while the Ilia layers pink peppercorn with blueberry, pomegranate, and bergamot. The Naousa introduces a deeper profile with Scotch, apricot, vanilla, and herbal notes, while a thoughtful selection of non-alcoholic offerings ensures the experience remains inclusive.
A Space Shaped by Light and Movement
Spanning over 9,000 square feet of interior space, with an additional terrace, GAIA Miami is designed to feel both expansive and intimate. A wraparound glazed façade fills the room with natural light, creating a seamless connection between indoor and outdoor dining.
Inside, the design draws from Mediterranean textures and tones—seafoam glass, sand-colored fabrics, and Greek-sourced marble—layered with sculptural lighting, bespoke furnishings, and handcrafted details. The space flows from bar to dining room to open kitchen, encouraging movement and discovery throughout the experience.
