Lincoln Road is getting a new Japanese dining destination this October, and this one is putting an entertaining spin on the traditional sushi experience.
UKIYO, the latest concept from NOAH Hospitality Group, is preparing to open at 818 Lincoln Road in Miami Beach, bringing Japan’s iconic kaiten, or conveyor belt sushi, tradition to a 7,431-square-foot restaurant designed around food, movement and theatrical presentation.
Rather than simply delivering sushi to the table, UKIYO’s custom-designed conveyor belt will serve as the centerpiece of the dining room, continuously circulating handcrafted selections while live culinary performances and choreographed presentations unfold around guests.
The result promises to be an immersive dining experience that combines traditional Japanese techniques with the energy of Miami Beach.
A New Take on Conveyor Belt Sushi

At UKIYO, the conveyor belt is more than a convenient way to serve sushi. It’s the foundation of the restaurant’s dining experience.
Guests will be able to watch handcrafted sushi travel through the dining room while chefs bring additional elements of Japanese culinary culture to life through live demonstrations and carefully choreographed presentations.
The concept draws inspiration from kaiten sushi, a dining tradition that originated in Japan and allows guests to select freshly prepared sushi as it circulates past their seats. UKIYO builds on that format with an emphasis on premium ingredients, contemporary design and entertainment.
Even the restaurant’s name, UKIYO, meaning “floating world,” is reflected in its design and the continuous movement of its signature conveyor belt.
Premium Japanese Seafood, Tableside Kamameshi and More

Leading the kitchen is Executive Chef Nono Shigetomi, whose menu will emphasize premium seafood sourced from carefully selected fisheries across Japan, imported Japanese pantry ingredients and seasonal South Florida produce.
“Freshness isn’t our goal, it’s our starting point,” says Shigetomi. “Every ingredient is selected with intention because great sushi begins long before the fish reaches the plate.”
While sushi will be central to the experience, the menu extends well beyond the conveyor belt.
Guests can expect the signature Ukiyo Roll, freshly cooked tableside kamameshi—a traditional Japanese rice dish prepared in an iron pot—robata-grilled skewers and rich paitan ramen.
Another distinctive addition is the restaurant’s House Dumpling Cart, which will circulate throughout the dining room with an evolving selection of dumplings, adding another interactive element to the meal.
Together, the offerings are designed to give diners multiple ways to experience Japanese cuisine, whether stopping in for sushi or settling in for a full evening of dining.
A Design Inspired by Japan’s Floating World

The restaurant’s interiors, designed by Casa Medina Design Studio, will bring the floating-world concept to life through a combination of natural materials, sculptural details and dramatic lighting.
The 7,431-square-foot space will feature Rosso Lepanto stone, emerald-toned leathered marble, handcrafted millwork and aged brass accents. Japanese-inspired lantern lighting and a flowing water feature will add warmth and movement throughout the restaurant.
At the center of it all, the custom conveyor belt will serve as both a functional dining feature and a defining architectural element.
The design also includes a dramatic entrance passage, a sophisticated sushi bar, a dedicated bar with softly illuminated Japanese-inspired screens and an outdoor dining area that incorporates landscaping, water and layered lighting.
Together, the spaces are intended to create a seamless transition between dining, entertainment and nightlife.
A New Late-Night Dining Destination on Lincoln Road

With dinner service planned until 2 a.m. on Fridays and Saturdays, UKIYO is positioning itself as more than a traditional sushi restaurant.
Its combination of premium Japanese cuisine, theatrical presentations and an immersive setting is designed to appeal to guests looking for a full evening out, whether that means an intimate dinner, a group gathering or a late-night stop on Lincoln Road.
The restaurant is expected to open in mid-October, adding another dining option to Miami Beach’s evolving culinary scene.
